Ingredients

  • 2 tsp instant coffee
  • 1 cup reduced-fat milk, frozen into cubes
  • 2 tbs boiling water
  • 2 dates, pitted
  • 1 cup reduced-fat milk
  • 1/2 tsp vanilla essence

Method

  1. Add instant coffee and hot water to a blender or jug that can be used with a stick blender. Swirl or stir until coffee is dissolved.
  2. Add dates, milk and vanilla essence and blitz until smooth.
  3. Add milk ice blocks and blitz until desired texture is reached.

Variation:

You can substitute cow’s milk with a plant-based milk alternative like soy (choose one that is fortified with calcium).

Comment:

To make milk ice cubes, pour milk into an ice cube tray and freeze until hard (at least 2 hours).
