Ingredients

  • 2 1/2 cups reduced-fat milk
  • 1 tbs sugar
  • 1/4 tsp ground cinnamon
  • 1/3 cup rice (uncooked)
  • 1/4 cup sultanas
  • 1 apple, grated

Method

  1. Place the milk, sugar and cinnamon in a large saucepan over medium heat; bring to the boil while stirring.
  2. Add remaining ingredients and reduce heat to low.
  3. Simmer gently for 30 minutes, stirring occasionally, until the liquid is absorbed and the rice is just cooked.

    Add the fruit at the end. The milk doesn't like the apple juice. If you make the rice with water you don't get such a creamy pudding rice. My child loves this.

    Same thing happened to me - getting ready for people over for dinner. Just had to quickly put a jelly in the freezer to go with fruit!! Any tips on making pudding so the milk doesn't curdle?

    Made this tonight it was delicious but the milk did curdle so next time I will cook the rice in water and then add the milk sugar and cinnamon at the end
