Ingredients

  • 3/4 cup wholemeal self-raising flour
  • 3/4 cup white self-raising flour
  • 1 1/2 tsp baking powder
  • 1/4 cup sugar
  • 1 1/3 cups reduced-fat milk
  • 2 tsp vanilla essence
  • olive or canola oil spray
  • 2 large banana
  • 1/2 cup fresh or frozen berries

Method

  1. Pre-heat oven to 220°C (200°C fan-forced).
  2. Combine flour, baking powder, sugar, milk and vanilla essence in a large mixing bowl.
  3. Line a large shallow baking pan with baking paper and spray with oil.
  4. Pour batter into the pan, spread evenly, and arrange banana slices and berries on the top.
  5. Bake for 12 minutes or until top is golden.
  6. Remove from oven, tip onto a chopping board and slice. Enjoy warm or room temperature.

Variation:

Reduced-fat cow's milk can be replaced with your milk of choice. Choose a plant-based milk to make this dish vegan and lactose-free.
