Ingredients

  • 4 slices wholemeal bread
  • olive or canola oil spray
  • 2 tsp olive oil
  • 3 tbs balsamic vinegar
  • 250 g cherry tomatoes, halved
  • 1 Lebanese cucumber, chopped
  • 1 red capsicum, chopped
  • 1/2 cup basil leaves
  • 100 g reduced-fat feta cheese, crumbled

Method

  1. Preheat grill to 200°C (180°C fan forced).
  2. Spray both sides of each bread slice with oil spray and place on a baking tray.
  3. Toast bread under the grill until the first side is golden brown, around 5 minutes. Turn slices using tongs or a fork and return to the grill until the other side is also toasted. Tear toast into pieces.
  4. Combine vinegar and oil in a small bowl or cup.
  5. Add tomatoes, cucumber, capsicum, basil, fetta and bread cubes to a large bowl. Pour over the dressing, combine and serve immediately.

Healthy tip!

Try mustard instead of mayonnaise to add extra flavour to your salads and sandwiches.
