Healthy Greek Salad Recipe
Ingredients
- 1 cucumber, seeded and cubed
- 1/2 red onion, sliced
- 4 tomatoes, cut into wedges
- 12 olives
- 125 g reduced-fat feta cheese, diced
- 1 spring onion (including green top), sliced
- 2 handfuls English spinach leaves, washed
- 2 tbs parsley, chopped
- 1/2 cup reduced-fat Greek salad dressing
Method
- Combine ingredients in a serving bowl and mix well.

Hi Ray, If you can't find Greek salad dressing you could make your own! Try 1/4 cup olive oil + 2 tbs red wine vinegar + 2 tbs lemon juice + a pinch of dried oregano + 1/2 clove of garlic. Shake it all up in a jar and pour over just before serving. This dressing keeps for ages in the fridge so feel free to make a double or triple batch. Cheers, Anne

Where are you guys finding the 'greek salad dressing'? I have checked Woolworths, Coles, and IGA here in the Bunbury / Capel area and none of them sell it.
