Sesame Brussel Sprouts

Ingredients

  • 20 Brussels sprouts, washed
  • 1 tsp fresh ginger, finely chopped
  • 2 tsp sesame seeds, toasted
  • 1 tsp sesame oil
  • 2 tbs fresh coriander, chopped
  • 1 tsp lemon juice
  • 1 tsp lemon rind, grated
  • 1 tbs salt-reduced soy sauce

Method

  1. Score end of Brussels sprouts stems with a small cross to speed up cooking.
  2. Plunge into boiling water with ginger and cook for 8-12 minutes or until tender.
  3. Drain well and transfer into a serving bowl.
  4. Add remaining ingredients, toss well and serve.
