Ingredients

  • olive or canola oil spray
  • 1 cup rolled oats
  • 1 cup low-fat natural yoghurt
  • 2 apples, grated
  • 4 tbs sultanas
  • 3 tsp ground cinnamon
  • 3 tbs sugar
  • 3 tbs oil or margarine
  • 2 eggs
  • 1/4 cup reduced-fat milk
  • 1 cup self-raising flour

Method

  1. Preheat oven to 180°C and lightly grease a 12-hole muffin tray with oil spray or margarine.
  2. Mix the oats and yoghurt together, then add all remaining ingredients to a large bowl and mix well.
  3. Divide the mixture evenly between the 12 muffin holes.
  4. Bake for 25-30 minutes, until the tops are golden and a skewer inserted into the middle of a muffin comes out clean.

Comment:

These muffins freeze well for up to 3 months. Pack one in a lunchbox in the morning and it will be defrosted and ready to eat by recess morning tea time.

    It is 4 Tablespoons sultanas and grate the apples…it is stated clearly in the recipe!

    These are so easy and quick to make. We found them very moist and all thought they were delicious eaten warm straight from the oven. Definitely would make these again.

    Hi Mandy, Thanks for letting us know! I've fixed up the recipe - I blame the computer for dropping off the extra instructions! It should be half a cup of sultanas and the apples should be grated. Happy baking. -AF

    Live lighter should revise this recipe. It is to vague! 2 apples are listed in the ingredients list, should they be peeled?? Grated or diced?? Also listed is sultanas but how much??
