Sausage and apple tray bake 3-2-1

This one-tray wonder features the classic flavours of pork and apple with some of our favourite winter vegies.

Ingredients

  • 400 g lean pork sausages
  • 1 onion, cut into wedges
  • 2 apples, cut into wedges
  • 6 potatoes, cut into wedges
  • 2 carrots, cut into wedges
  • 1 zucchini, cut into wedges
  • 1 lemon, halved
  • 2 tbs olive oil
  • pepper, to taste
  • 3 cups baby spinach leaves

Method

  1. Preheat oven to 200C (180C fan-forced).

  2. Cut vegetables into fairly even-sized pieces and halve the sausages and the lemon.

  3. Put sausages, vegetables, apples and lemon in a large baking tray, drizzle with oil and season with pepper.

  4. Bake for 30 minutes.

  5. Remove tray from the oven, add the baby spinach, and use tongs to squeeze the hot lemon all over the tray. Bake for another 2 minutes.

  6. Divide between 4 bowls and enjoy!


Variation:

Use the vegies you have on hand! Sweet potato, capsicum and broccoli all work well. Pear or peach would work well instead of apples. Peas and green beans (including frozen!) are a great swap for baby spinach (i.e. added at the last minute).
