A crunchy, simple salad to have with your favourite meal.


  • 6 slices cucumber
  • 1 cup lettuce leaves, shredded
  • 4 cherry tomatoes, halved
  • 1/2 small capsicum, thinly sliced
  • 1/2 spring onions (including green tops), ends trimmed, chopped


Combine all ingredients and serve.

Variation: Add in any salad vegetables such as mushrooms, carrot and/or spinach.

Healthy tip!

Try mustard instead of mayonnaise to add extra flavour to your salads and sandwiches.
