Avocado & Egg Sandwich

The best vegie sandwich around!


  • 2 slices wholegrain bread
  • 1/2 cup baby spinach leaves
  • 1 egg, hard boiled and de-shelled
  • 2 tbs avocado
  • 1 tbs low-fat natural or Greek yoghurt
  • 1/4 tsp Dijon mustard
  • 1/2 tbs lemon juice


  1. Put spinach leaves over one slice of bread.
  2. In a small bowl, mash egg and avocado together.
  3. Add yoghurt, mustard and lemon juice and mix well.
  4. Spread over the remaining bread slice and sandwich to the spinach.

Healthy tip!

Try mustard instead of mayonnaise to add extra flavour to your salads and sandwiches.

    If you don't like yoghurt, you could just swap it for a low fat mayonnaise. But you'd be surprised how yummy natural Greek yoghurt is instead of Mayo. @vanessa santoro:)
