  • 2 medium red capsicum, cut in half lengthways, stem and seeds removed
  • 65 g reduced-fat Greek-style feta cheese
  • 1/4 cup unsalted cashews


  1. Preheat oven to 200°C (180°C fan-forced)
  2. Put capsicum halves on a baking tray with the skin side up. Place in the oven on the top shelf and cook for 25 min.
  3. Remove baking tray from the oven and leave for a few minutes until capsicums are cool enough to touch.
  4. Peel off any of the capsicum skin that pulls away easily.
  5. Blend capsicum flesh, fetta and cashews in a medium-sized mixing bowl using a bar mix.
  6. Serve with cut up vegies or grainy crackers.
