Ingredients

  • 2 eggs
  • 2 tbs reduced-fat milk
  • 6 wholemeal crumpets
  • 1 tsp oil
  • 1 avocado, sliced
  • 1 large tomato, sliced
  • to taste pepper

Method

  1. In a large bowl, whisk together eggs and milk. (Hint: use the eggshell to measure the milk. Half an eggshell = approximately 1 tbs)
  2. Dip crumpets in the mixture, pressing down and flipping to completely soak with egg mixture.
  3. Heat half the oil in a large non-stick frypan with. Fry half the eggy crumpets for 2-3 minutes on each side, till golden brown. Repeat with remaining crumpets.
  4. Top frumpets with avocado, tomato and pepper and enjoy warm.

Variation:

This works with any kind of bread! Try sourdough, baguette or stale sliced bread.
