Healthy One Pot Chicken Curry Recipe
Ingredients
- 10 skinless chicken thighs
- 2 apples
- 4 cups peas or beans
- 2 onions
- 4 small zucchinis
- 2 x 880 crushed tomatoes
- 1 tbs sultanas
- 3 tbs curry powder
- pepper, to taste
- 4 cloves garlic, crushed
Method
- Take skin off chicken.
- Peel and chop apples and onions.
- Chop zucchini.
- Place apples, onions, zucchini, peas or beans, chicken, tomatoes, sultanas, curry powder, garlic and pepper into a large saucepan.
- Bring to the boil slowly and cook over low heat for 1 hour.

Hi Diane, thanks for getting in touch! I've checked back through our records and the recipe definitely calls for 2 x 880g tins of tomatoes. This recipe serves 10 people which is why the quantity of ingredients is so large. Cheers, G.

Hi Pamela! The beauty of this recipe is that it's super flexible! You could replace the zucchini with any other vegies you like. Broccoli, capsicum, celery and carrots all sound yummy to me! -AF
