Mixed Bean Salad

A zesty dressing livens up this classic BBQ dish


  • 400 g can no-added-salt four bean mix, drained and rinsed
  • 1/2 cup frozen peas, defrosted
  • 1 spring onion (including green top), sliced
  • 2 tomatoes, chopped
  • 1/4 cup parsley, chopped
  • 2 tbs olive oil
  • 2 tbs lemon juice (or vinegar)
  • 1 clove garlic, crushed


  1. Combine the beans, peas, onion, tomatoes and parsley in a salad bowl.
  2. In a small bowl, mix the oil, lemon juice and garlic until combined.
  3. Pour the dressing over the bean mix and toss well to coat in the dressing.

Healthy tip!

Choose plain water or soda water in place of a sugary drink.

    I love this salad and change it up to suit my tastes. I don't include peas, but I do add capsicum, cucumber, a lot more parsley and swap out the spring onion for red onion. I also let the onion and garlic sit together in lime/lemon juice while I chop up everything else.
