It's plum pudding... but not as you know it! This fresh and juicy pud is a breeze to whip up and works well with a wide variety of fruits.

Ingredients

  • 1 canned plums in juice
  • 1 tsp lemon zest
  • 1 egg
  • 3 tbs canola oil
  • 1/2 cup reduced-fat milk
  • 1 tsp vanilla extract
  • 1/2 cup wholemeal self-raising flour
  • 1/2 cup white self-raising flour
  • 1/3 cup sugar

Method

  1. Preheat oven to 180°C fan-forced
  2. Remove pits from plums if desired and add to the baking dish. Sprinkle over the lemon zest.
  3. Crack egg into a large bowl and lightly whisk with a fork. Mix in oil, milk, vanilla essence and ¼ cup of the plum juice from the can.
  4. Add flours and sugar and mix until combined.
  5. Drizzle the batter over the plums.
  6. Bake for 20 minutes or until top is golden.

Variation:

Try with canned apple, frozen berries, tinned peaches or freshly cooked fruit. 

Serving Suggestion:

Serve with Greek yoghurt. 

Comment:

Mix leftover plum juice with sparkling water for a fresh and fruity drink!
