Healthy Bbq Bean Slaw Bowls Recipe
Ingredients
- 800 g sweet potato
- 1 tbs mayonnaise
- 4 tbs Greek or natural yoghurt
- 1 tbs Dijon mustard
- 2 tbs lemon juice
- 400 g shredded coleslaw (no dressing)
- 2 x 400 g cans black beans, drained and rinsed
- 4 tbs barbecue sauce
- 1 tsp smoked paprika
- 1 cup frozen corn kernel, defrosted
- 4 pickled cucumbers or gherkins
Method
- Scrub sweet potato and use a fork to prick at least a dozen times. Place sweet potato in a bowl and cover with a plate. Microwave on HIGH for 3-4 minutes, turn over and cook another 3-4 minutes until softened and cooked in the centre. Be careful when turning over the sweet potato - steam will burn!
- While sweet potato is cooking, mix the slaw dressing ingredients in a large bowl, then toss through with the slaw vegetables. Tip: Use a potato masher or your hands to work the dressing into the slaw and soften it up.
- Divide the beans, BBQ sauce and smoked paprika between the serving bowls and toss to coat.
- Add the corn and pickles to each bowl, then add the dressed slaw and cooked sweet potato.
Variation:
- Try brown rice instead of sweet potato
- Try chicken or tofu instead of black beans
