Salsa is the Mexican word for sauce. This homemade version is a tasty way to add extra veg to meals!

Ingredients

  • 2 tomatoes, chopped
  • 1 Lebanese cucumber, chopped
  • 1/2 red onion, finely chopped
  • 1 tsp lemon juice
  • 2 tsp olive oil
  • 1 tbs parsley, chopped

Method

Combine all ingredients and toss well.

Hint
Salsa will keep for 3-4 days, covered, in the refrigerator.

Variation: For a spicy Mexican salsa add 1 ripe avocado, 1 small red chilli, seeded and chopped (or pinch of dried chilli flakes), and 1 tablespoon fresh coriander.
Serving Suggestion: Spoon over grilled fish or chicken. This recipe is also a delicious topping on bread.

Healthy tip!

Try mustard instead of mayonnaise to add extra flavour to your salads and sandwiches.

    Very versatile and tasty side dish. I put half the amount of onion and I added corn too. Served with guacamole from this site too.
