Cook: 25 mins
Serves: 12
It's like a bowl of cereal you can hold in one hand!

  • olive or canola oil spray
  • 1 cup rolled oats
  • 1 cup low-fat natural yoghurt
  • 2 apples, grated
  • 1/2 cup sultanas
  • 3 tsp ground cinnamon
  • 3 tbs sugar
  • 3 tbs oil or margarine
  • 2 eggs
  • 1/4 cup reduced-fat milk
  • 1 cup self-raising flour

  1. Preheat oven to 180°C and lightly grease a 12-hole muffin tray with oil spray or margarine.
  2. Mix the oats and yoghurt together, then add all remaining ingredients to a large bowl and mix well.
  3. Divide the mixture evenly between the 12 muffin holes.
  4. Bake for 25-30 minutes, until the tops are golden and a skewer inserted into the middle of a muffin comes out clean.

Comment: These muffins freeze well for up to 3 months. Pack one in a lunchbox in the morning and it will be defrosted and ready to eat by recess morning tea time.

Healthy tip!

Simple switch idea: try reduced-fat milk, cheese and yoghurt.

Hi Mandy, Thanks for letting us know! I've fixed up the recipe - I blame the computer for dropping off the extra instructions! It should be half a cup of sultanas and the apples should be grated. Happy baking. -AF
