Healthy Muesli Muffins Recipe
Ingredients
- olive or canola oil spray
- 1 cup rolled oats
- 1 cup low-fat natural yoghurt
- 2 apples, grated
- 4 tbs sultanas
- 3 tsp ground cinnamon
- 3 tbs sugar
- 3 tbs oil or margarine
- 2 eggs
- 1/4 cup reduced-fat milk
- 1 cup self-raising flour
Method
- Preheat oven to 180°C and lightly grease a 12-hole muffin tray with oil spray or margarine.
- Mix the oats and yoghurt together, then add all remaining ingredients to a large bowl and mix well.
- Divide the mixture evenly between the 12 muffin holes.
- Bake for 25-30 minutes, until the tops are golden and a skewer inserted into the middle of a muffin comes out clean.
Comment:
These muffins freeze well for up to 3 months. Pack one in a lunchbox in the morning and it will be defrosted and ready to eat by recess morning tea time.

Live lighter should revise this recipe. It is to vague! 2 apples are listed in the ingredients list, should they be peeled?? Grated or diced?? Also listed is sultanas but how much??
