Healthy Coffee Blizzard Recipe
- 2 tsp instant coffee
- 1 cup reduced-fat milk, frozen into cubes
- 2 tbs boiling water
- 2 dates, pitted
- 1 cup reduced-fat milk
- 1/2 tsp vanilla essence
- Add instant coffee and hot water to a blender or jug that can be used with a stick blender. Swirl or stir until coffee is dissolved.
- Add dates, milk and vanilla essence and blitz until smooth.
- Add milk ice blocks and blitz until desired texture is reached.
Variation: You can substitute cow’s milk with a plant-based milk alternative like soy (choose one that is fortified with calcium).
Comment: To make milk ice cubes, pour milk into an ice cube tray and freeze until hard (at least 2 hours).
